India is the world’s second largest producer of sugar. The largest producer is Brazil. India however is the largest consumer of sugar. Maharashtra, Uttar Pradesh, and Karnataka are the highest sugar producing states in the country.
There are 732 sugar mills in the country out of which more than 60 per cent are in Uttar Pradesh. The first sugar mill of India was established in 1904 at Saran in Bihar. The largest sugar mill in Asia as of today is the Triveni Sugar Mill in Khatauli. The sugar production in India is overlooked by), All India Sugar Trade Association (AISTA), Indian Sugar Mills Association (ISMA), The Sugar Technologists Association of India (STAI) and National Sugar Institute (NSI). India is the only country in the entire world which harvests plantation white sugar. All other countries are producing either refined sugar or raw sugar. The sugarcane that is grown is used to make white sugar and other sweeteners.

Note: Other than sugar, India also produces Gur and Khandsari. These are used as substitute sugar and are made from unrefined sugarcane juice. Around $45\%$ of the sugarcane of India is used to make Khandsari.
