Sodium bicarbonate - \[N{{a}^{+}}HCO_{3}^{-}\], is a salt made up of a sodium cation \[(N{{a}^{+}})\] and a bicarbonate anion \[(HCO_{3}^{-})\].
It is known as baking powder, as it is used in baking as a leavening agent. When baking powder is added to a dough, it results in rising of the dough by releasing carbon dioxide. It is popularly used owing to its cheaper price and stability.
The chemical reaction for decomposition of Sodium Bicarbonate is given below-
\[2NaHC{{O}_{3}}(s)\to N{{a}_{2}}C{{O}_{3}}(s)+C{{O}_{2}}(g)\uparrow +{{H}_{2}}O(g)\uparrow \]
Sodium Bicarbonate, on heating decomposes into sodium carbonate, carbon dioxide and water vapour. The carbon dioxide and water vapour thus release and cause the dough to rise.
