For a two-days journey by train, I would carry food items which are packed and wouldn't spoil fast, which include chips, biscuits and roasted peanuts, canned food items (such as beans), other processed food items ( bread and jam) and dried fruits.
Out of these, bread and jam should be consumed first, as it has a lower expiration date among the rest items.
The major reason for these particular food items is because they have the least accessibility for microorganisms and they inhibit the growth of microbes for a comparatively longer period. Let's take the example of packed foods such as chips and biscuits where the packets are airtight and manufacturing companies seal the packets with nitrogen, which is an inert gas that does not support microbial growth. While packing we should make sure that the food items are airtight so that microbes can’t enter the food by air contact.
Other food items such as canned foods and processed food items have a shelf-life period, during which they do not get spoiled.

-Shelf-life of food items varies from product to product, do not take products that are puffed or expiry date ending soon.
-There are various measures for preventing food from spoiling like, drying, by adding preservatives, freezing, salting.
-Packed foods are preserved for a long time by using either vacuum packing or they are filled with nitrogen as it prevents food from getting oxidised and keeping it fresh for a longer time.
